Saskatoon Blueberry Balsamic Thyme Shrub
Use this shrub for a base for a great summer drink. Just add sparkling water or sparkling wine
Prep: 10 minutes, Marinate: 4 to 5 days, Makes: 1½ cups
Ingredients
2 cups saskatoons or blueberry’s or a combination of both
3/4 cup sugar
2/3 cup Vinesation Blueberry Balsamic (or another one of your choice)
1/3 cup cider vinegar
4 Large sprigs thyme
Directions
**Use a sanitary prep area, container and utensils and wash fruits before preparing**
Mash berries in a medium bowl; cover in sugar and stir well. Add remaining ingredients and stir until well combined. Cover and refrigerate for at least 8 hours.
Remove mixture from refrigerator and strain through a mesh sieve to remove chunks. Pour strained mixture into a clean bottle or jar. Stir again and refrigerate for 3 to 4 more days.
Keep refrigerated until ready to use, for up to 1 month. Discard shrub immediately if off odors or colors develop or if it’s giving off any gases or bubbling.
Directions for Italian Soda
1 oz. Shrub
½ oz Lemon Juice
Sparkling White Wine or Sparkling Water
Combine shrub and lemon juice in a tall glass, add ice and top sparkling white wine or sparkling water
