Pumpkin Orange Granola
3 c uprolled oats
¾ cup coconut
1 cup pecan halves or other nuts
1 tbsp pumpkin pie spice
¼ tsp salt
½ cup pumpkin puree
¼ cup maple syrup
¼ cup brown sugar
⅓ Vinesation Blood Orange Olive Oil
(to make pumpkin pie spice: 1 tbsp gr. cinnamon, 1 tsp gr. ginger, 1 tsp gr. nutmeg, 1 tsp gr. allspice)
Preheat oven to 300 degrees. Stir oats, coconut, pecans, pumpkin pie spice and salt together. Combine pumpkin puree, maple syrup and brown sugar together in small saucepan. Cook over medium heat just until brown sugar is melted, stirring constantly. Remove from heat and stir in olive oil. Mix pumpkin mixture with the oat mixture. Spread thinly onto baking sheets and cook until lightly browned, about 35 min.
Remove from oven and cool completely. Store in an airtight container.
