Southwest Salad Vinesation Style

SOUTHWEST SALAD (VINESATION STYLE)

Dressing:

In a blender combine the following until creamy:

1 cup fresh chopped parsley (I prefer parsley but you can use fresh cilantro)

½ Avocado

Juice of 1 lime

2 cloves chopped fresh garlic

¼ cup Vinesation Persian Lime Olive Oil 

1½ tsp Vinesation Sicilian Lemon Balsamic

⅛ tsp salt

2 tsp liquid honey

 

1/4 cup

 

 

 Salad:

1 large head of Romain Lettuce (chopped)

2 cups canned Niblet Corn (drained)

1-15 oz. can of black beans (drained)

1 pint of grape tomatoes (chopped)

1 large orange bell pepper (chopped)

5 green onions chopped

Mix all salad ingredients together then pour the prepared dressing over top and toss  until combined.  Serve with tortilla chips.

 Variations:  I added seasoned (with Vinesation Seasonello Salt) ground beef.  Sprinkle  shredded cheese on top.  Serve with sour cream and salsa if desired.
