STRAWBERRY BASIL SPINACH SALAD
1 bunch fresh spinach
1 cup fresh strawberries (sliced)
½ cup crumbled feta cheese
½ large red onion (thinly sliced)
½ cup toasted pecans (candied are nice)
¼ cup Vinesation Strawberry Balsamic Vinegar
2 tbsp. liquid honey (optional-helps with emulsion)
½ cup Vinesation Basil Olive Oil
Salt and Pepper to taste
Combine spinach, strawberries, cheese, onions and pecans in a large bowl.
Stir the balsamic vinegar and the honey together until well mixed in a bowl. Slowly (in a steady stream) pour the olive oil into the balsamic mixture while whisking continuously for about 2 minutes until well emulsified. Season with salt and pepper. Drizzle the vinaigrette over the salad just before serving.
