Greek Salad with Dill

Ingredients:

2 peppers (1 orange and 1 yellow) washed and chopped

2 whole cucumbers washed and chopped

1 cup of grape tomatoes, halved

½ large red onion (thinly sliced)

2 Fresh Dill sprigs chopped

2 cooked chicken breasts chopped (available at Vinesation)

½ cup or more of feta cheese

2 Tbsp. Vinesation Dill Olive Oil (or just double the Milanese Gremolata)

2 Tbsp. Vinesation Milanese Gremolata Olive Oil

2 Tbsp. Vinesation Oregano Balsamic Vinegar

Saltwest Smashed Peppercorn to taste (available at Vinesation) or can use salt and pepper to taste.

Instructions:

Combine vegetables into large bowl then top with the dill, feta and chicken. Top with vinaigrette and smashed peppercorn, mix and serve

Vinaigrette:

Pour vinegar and oils into a small cup or bowl and whisk for about a minute until well emulsified.  Drizzle over salad
